My philosophy is to connect the world through authentic Japanese sushi
and to create unforgettable memories for every guest.

I lived in Düsseldorf, Germany, for two years starting in 1991,
and later spent three and a half years in Vancouver, Canada.
I have also travelled to more than 24 countries.

Through these experiences, I realized that
Japanese sushi is deeply loved around the world.
At the same time, while many countries have their own creative and interesting versions of sushi,
I also noticed that many people have never experienced true, traditional Japanese sushi.

This awareness became my mission:
to share authentic Japanese sushi with the world.


I decided to become a sushi chef and trained at the Tokyo Sushi Academy,
followed by hands-on experience working in sushi restaurants.

During my years in Canada, I raised my two young children while living abroad.
The kindness and support of the local people made each day warm, enjoyable, and reassuring.

Because of that experience, I strongly wish for visitors to Japan
to feel the same sense of warmth and comfort.
And I hope that this sushi class becomes one of the best memories of their time in Japan.

Today, as an English-speaking sushi chef,
I teach in Kawagoe, Saitama, and Tsukiji,
and have shared sushi-making with over 3,000 international guests.I will continue to connect with the world through sushi,
respecting Japan’s culinary traditions
and offering meaningful, memorable experiences to everyone who visits.
